A Few Good Meals

I wanted to share a few recipes with you all. If you try them, please come back and let me know how you liked them.

Easy Cheesy Polenta with Meat Sauce:
Ingredients
Ground Hamburger (or your choice of meat: chicken, turkey, etc)
Spaghetti Sauce
Organic Italian Polenta (found this marked down for Quick-Sale at Kroger)
Shredded Mozzerella Cheese

Directions
The recipe calls for this to be assembled as a casserole, but this is how I prepared it:
Brown the meat, drain off grease. Add spaghetti sauce. Heat and set aside.
Slice polenta into 1/2 inch slices and fry in olive oil until golden brown on both sides.
Top with meat sauce and shredded cheese.
I served this with a side salad.

Pesto Chicken:
Ingredients
Pesto (prepared or homemade)
4 boneless, skinless chicken breasts

Directions
Place chicken breasts and Pesto sauce in a resealable plastic bag.
Refrigerate.
After a few hours, take the chicken out of the bag and put in a shallow baking dish.
Cook in 425 degree oven about 20 minutes.
I served this with rice, side salad and cantaloupe.
