Meatless Monday Recipe

Mexican Soup

Ingredients:
1 can Rotel tomatoes w/ green chiles
1 can black beans
1 can corn
1 small can tomato sauce (optional)

Directions:
Mix all ingredients in slow cooker or Dutch oven.
Cook in slow cooker on low/Dutch oven on medium heat until bubbly.
Serve over rice (prepare according to package directions)

Meat choices:
This is a quick, easy meal that can be served with chicken or ground hamburger.
